French sweet treats are a highlight of the cuisine. The famous madeleine or petite madeleine is a traditional small cake from the Lorraine region with a distinctive shell-like shape acquired from being baked in pans with shell-shaped depressions. A génoise cake batter is used to create a marvellous flavor that is slightly lighter than that of a pound cake. You will also find very finely ground nuts such as almonds in authentic French recipes, or a dash of lemon zest. Add a coat of jam and desiccated coconut, or some glacé cherry, and you have an irresistible baked treat.
