Sablé biscuits are round pieces of delectable shortbread. Originating from Sablé-sur-Sarthe, these cookies are a uniquely French twist on the richness and creaminess of shortbread. In French sable means ‘sand’, used in the same way as the English word ‘breadcrumbs’. These round delights are named like this because the baker rubs cold butter into flour and sugar to form sand-like particles of sweet dough. Sablés can also be given an extra dash of flavour with almonds, lemon, or orange zest.
