Rillettes

You're in for a Treat

Served on bread or toast at room temperature, it’s hard to forget the distinct, tantalising flavours of Rillettes. Similar to pâté, it’s usually made from pork. The meat is cubed or chopped, salted heavily and cooked slowly in fat. Once it is tender, it is shredded and a layer of the cooking fat is spread atop the meat. Then the rillettes are turned into a paste. Rillettes can be made with other meats, or goose, duck, chicken, game birds, rabbit and sometimes even with fish. Sarthe (Le Mans), Tours, and Anjou, all in central France, are some of the best places to buy rillettes.
